Recipe: Roasted Sweet Potato and Apple Soup

I saw this recipe in Real Simple Magazine this month and thought of all the sweet potatoes we are getting from Green Thumb Farm. This is my version of the recipe:

Roasted Sweet Potato and Apple Soup

Ingredients:

- 3 lbs. sweet potatoes
- 2 tbsp. olive oil
- 1 medium size onion diced
- 2 chopped stalks of celery
- 1 peeled and chopped apple
- 1 tsp. ground sage
- 1 tbsp. chopped fresh winter savory (or one tsp. dried savory, thyme or rosemary)
- 1 crushed clove of garlic
- 4 cups water
- 2 cups chicken or veggie broth (you can also use 6 cups water and just add a cube of your preferred bullion)
- salt and pepper to taste

Clean and pierce sweet potatoes and roast in 400 degree oven for 45 minutes to one hour. Meanwhile, heat oil in pot and add onion, garlic, apple, celery and herbs. Saute for 10 to 12 minutes over medium heat. Add liquid. Once potatoes are done, remove and discard peel and add potatoes to the soup. Cook 8 to 10 minutes. Use immersion blender to puree. Enjoy!
