Winter Squash Mock Souffle

16 oz. cooked winter squash, mashed
12 oz. andouille sausage*
1 large onion, slivered
1 Tbsp olive oil
2 oz. shredded cheddar
3 eggs
6 Tbsp half and half
kosher or sea salt
pepper

Preheat the oven to 350F. Cook squash until tender (microwave, boil or bake). While squash is cooking, dice and brown the sausage and onion in a skillet over medium heat. Drain and set aside. Lower oven to 325.

When squash is tender, remove flesh from skin and place in mixing bowl. Let cool. Mix thoroughly with cheese, egg and half and half. Add slightly cooled sausage and onion mixture and mix well. Add salt and pepper to taste. Put mixture into baking dish, and bake in oven for about 45-60 minutes. You can test for doneness by using a cake tester.

*For a vegetarian version, use diced, sauteed portabello mushrooms sprinkled with cajun seasoning.
